How long does prosciutto last?

Prosciutto keeps 2 to 3 months in the fridge, according to FoodKeeper, and about 1 month in the freezer. Once a pack of sliced prosciutto is opened, eat it within a few days. Pastrami keeps about 40 days in the fridge.

Fridge at 4 °C (40 °F) or colder, freezer at −18 °C (0 °F). Freezer times are for best quality: food kept frozen stays safe, but slowly loses taste and texture. These times are USDA guidance, not a guarantee. When in doubt, throw it out.

How to tell if prosciutto has gone bad

  • A sour, rancid or ammonia smell. Good prosciutto smells sweet and nutty.
  • A slimy, sticky surface or dark, dried-out slices.
  • Mold on slices. A whole ham with a little surface mold is a matter for the deli counter, but on sliced meat, throw it out.

How to store prosciutto

  • Keep sliced prosciutto in its package in the fridge until you open it, and follow the date.
  • Once opened, wrap slices in their paper and then in plastic, and eat them within a few days.
  • Take it out of the fridge 15 to 30 minutes before serving for the best flavor, but don't leave it out for more than 2 hours.

Can you freeze prosciutto?

Yes, for about 1 month. Freeze the slices with parchment between them, tightly wrapped. Thawed prosciutto is softer and harder to separate, so it's best for cooking: in pasta, on pizza or crisped in the oven.
