How long does broth last?

Unopened cartons or cans of broth keep until the date on the package in the pantry. Once opened, broth keeps 3 to 4 days in the fridge, and homemade broth the same. Both freeze for 2 to 3 months. Bouillon cubes keep about 1 year.

Fridge at 4 °C (40 °F) or colder, freezer at −18 °C (0 °F). Freezer times are for best quality: food kept frozen stays safe, but slowly loses taste and texture. These times are USDA guidance, not a guarantee. When in doubt, throw it out.

How to tell if broth has gone bad

  • A sour smell or taste.
  • Cloudiness, sliminess or bubbles in a broth that was clear. Homemade broth that sets like jelly in the fridge is normal: that's gelatin.
  • A bulging carton or can, or mold.

How to store broth

  • Keep unopened cartons and cans in a cool, dry cupboard.
  • Once opened, refrigerate broth in its closed carton or a sealed container, and use it within 3 to 4 days.
  • Cool homemade broth quickly, in shallow containers or an ice bath, and refrigerate it within 2 hours.
  • Bring refrigerated broth to a boil before using it.

Can you freeze broth?

Yes, for 2 to 3 months. Freeze it in portions: freezer bags laid flat, containers, or ice cube trays for small amounts. Leave room for expansion. Use it straight from frozen in soups, sauces and risottos.

Questions

How long does opened chicken broth last?

3 to 4 days in the fridge, even if the carton says otherwise for unopened storage.

Can you use broth after the date?

An unopened, undamaged carton or can kept cool is usually fine a little past its best-by date. Once opened, go by the 3 to 4 days.

Why does homemade broth turn to jelly?

Gelatin from the bones sets when it's cold. It's a sign of a rich broth, and it melts back when heated.
