Does baking soda expire?
Baking soda keeps 2 to 3 years unopened, and about 6 months once opened for the best results. Baking powder keeps 6 to 18 months unopened and 3 to 6 months once opened. They don't spoil, but they lose their power to make baked goods rise.

Fridge at 4 °C (40 °F) or colder, freezer at −18 °C (0 °F). Freezer times are for best quality: food kept frozen stays safe, but slowly loses taste and texture. These times are USDA guidance, not a guarantee. When in doubt, throw it out.
How to tell if baking soda has gone bad
- It fails the test: see below. That's the only sign that matters.
- Hard clumps: moisture got in and it has likely lost strength.
- Insects or a strange smell, picked up from the cupboard or fridge: replace it.
How to store baking soda
- Keep both in tightly closed containers in a cool, dry cupboard: moisture activates them.
- Don't use a box of baking soda that has been deodorizing the fridge for baking: it has absorbed odors.
- Use a dry spoon and close the lid straight away.
Can you freeze baking soda?
There's no reason to: moisture from thawing would only weaken it. Keep it dry in the pantry.
Questions
How do you test baking soda?
Add 1/4 teaspoon to 2 tablespoons of vinegar or lemon juice. If it fizzes strongly, it still works.
How do you test baking powder?
Stir 1 teaspoon into 1/3 cup (80 ml) of hot water. If it bubbles vigorously, it still works.
Can you use expired baking soda?
It's safe, but your cakes and cookies may not rise properly. Old baking soda is still good for cleaning.
