| Food | Fridge | Pantry |
|---|---|---|
| Evaporated or sweetened condensed milk, canned | —Opened: 4–5 days | 12 monthsfrom purchase |
Fridge at 4 °C (40 °F) or colder, freezer at −18 °C (0 °F). Freezer times are for best quality: food kept frozen stays safe, but slowly loses taste and texture. These times are USDA guidance, not a guarantee. When in doubt, throw it out.
How to tell if evaporated milk has gone bad
- A bulging, leaking, rusty or deeply dented can: throw it out unopened.
- A sour smell, lumps or mold once opened.
- Condensed milk that has darkened and thickened with age is still safe if the can is sound, but tastes caramelized.
How to store evaporated milk
- Keep cans in a cool, dry cupboard and use older ones first.
- Once opened, pour leftovers into a sealed glass or plastic container and refrigerate them.
- Shake or stir before using: it can separate in the can.
Can you freeze evaporated milk?
You can freeze leftover evaporated milk in a sealed container or ice cube trays for cooking; it separates when thawed, so whisk it well. Sweetened condensed milk doesn't freeze solid because of its sugar but keeps fine in the freezer for a few months.
Questions
How long does opened evaporated milk last?
4 to 5 days in the fridge, in a sealed container.
Can you use evaporated milk after the date?
An unopened can in perfect condition stored somewhere cool is usually fine for a while past its date; quality slowly declines.
What's the difference between evaporated and condensed milk?
Both are milk with about half the water removed. Condensed milk also has a lot of added sugar, which makes it thick and sweet.
