How long do eggs last?
Raw eggs in the shell keep 3 to 5 weeks in the fridge from the day you buy them. Hard-boiled eggs keep about 1 week, and raw whites or yolks 2 to 4 days.
| Food | Fridge | Freezer |
|---|---|---|
| Raw eggs in the shell | 3–5 weeksfrom purchase | Not recommended |
| Raw whites or yolks | 2–4 days | 12 months |
| Hard-boiled eggs | 1 week | Not recommended |
Fridge at 4 °C (40 °F) or colder, freezer at −18 °C (0 °F). Freezer times are for best quality: food kept frozen stays safe, but slowly loses taste and texture. These times are USDA guidance, not a guarantee. When in doubt, throw it out.
How to tell if eggs have gone bad
- A sulfur or rotten smell when you crack the egg is the clearest sign. Throw it out.
- A cracked, slimy or powdery shell: bacteria get in through cracks, so don't keep cracked eggs.
- Pink, green, black or iridescent whites or yolks mean the egg has spoiled.
- The float test (an old egg floats in water) shows age, not safety: the air pocket grows as the egg dries out. A floating egg can be fine and a sinking one can be spoiled, so trust your nose.
How to store eggs
- Keep eggs in their carton on a shelf inside the fridge, not in the door, where the temperature changes every time it opens.
- The carton protects the shells and stops eggs from picking up smells from other food.
- Don't wash eggs before storing them. If one is dirty, wipe it just before you use it.
- In the US, eggs are washed before sale and must stay refrigerated. In much of Europe they are sold unwashed and unrefrigerated, but the fridge still keeps them good for longer once you get them home.
- Once eggs have been in the fridge, don't leave them out for more than 2 hours: a cold egg sweats at room temperature, which helps bacteria through the shell.
Can you freeze eggs?
Not in the shell: the inside expands and the shell cracks. Beat whole eggs until just blended, or separate the whites and yolks, and freeze them in a sealed container for up to 12 months. Stir a pinch of salt or sugar into yolks so they don't turn gummy, and write the number of eggs and the date on the container. Don't freeze hard-boiled eggs: the whites turn tough and watery.
Questions
Can you eat eggs after the date on the carton?
In the US, the date on an egg carton is usually a sell-by or best-by date, and the USDA's guidance is 3 to 5 weeks in the fridge from purchase, which can run past it. Crack each egg into a separate bowl first and throw it out if it smells off or looks discolored.
How long can eggs sit out at room temperature?
Eggs that have been refrigerated shouldn't sit out for more than 2 hours, or 1 hour when it's above 32 °C (90 °F). The same rule applies to cooked egg dishes.
How long do hard-boiled eggs last?
About 1 week in the fridge, peeled or unpeeled. Refrigerate them within 2 hours of cooking and keep peeled eggs in a closed container.
Should eggs be stored pointy end down?
Yes, it helps a little. It keeps the yolk centered and the air pocket at the top, so the egg holds its quality slightly longer. Egg cartons are made to hold them that way.
