How long do bean sprouts last?

Fresh bean sprouts keep 5 to 10 days in the fridge from the day you buy them, but they're at their best within the first few days. Health agencies advise cooking sprouts thoroughly, especially for vulnerable people.

Fridge at 4 °C (40 °F) or colder, freezer at −18 °C (0 °F). Freezer times are for best quality: food kept frozen stays safe, but slowly loses taste and texture. These times are USDA guidance, not a guarantee. When in doubt, throw it out.

How to tell if bean sprouts have gone bad

  • Slimy, brown or translucent sprouts.
  • A sour, musty or fishy smell.
  • Liquid pooling in the bag, or mold.

How to store bean sprouts

  • Keep sprouts in the fridge at 4 °C (40 °F) or colder, in their package or a container lined with paper towel.
  • Rinse them just before cooking.
  • Don't buy sprouts that look slimy or smell musty.

Can you freeze bean sprouts?

You can, blanched for about a minute and dried well, but they lose their crunch. Use frozen sprouts only in cooked dishes like soups and stir-fries.

Questions

Are raw bean sprouts safe to eat?

Sprouts grow in warm, humid conditions that also suit bacteria such as Salmonella and E. coli, and they've been linked to outbreaks. Health agencies advise children, older adults, pregnant people and people with weakened immune systems not to eat them raw, and to cook them thoroughly.

How long do cooked bean sprouts last?

3 to 4 days in the fridge, like other cooked vegetables.

Does washing sprouts make them safe?

No: rinsing doesn't remove bacteria that may be inside the sprout. Thorough cooking does.

Add sprouts to ShelfLife and use them while they're fresh.
